ma tante's coffee cake...  

Ma Tante (my aunt) worked in a high school cafeteria for many years. One thing all the kids and faculty loved was her coffee cake which she made from her own recipe.  She made the wonderful rich, dense coffee cake with mouth-watering brown sugar crumble on top for special occasions and special friends, and hers was the most anticipated dessert at all family gatherings.

She began a small enterprise selling the cake and enjoyed sharing her recipe with everyone.  She taught me how to make the cake when I was very young and in a way passed the torch to me.  Now, I want to share the recipe with you!

This recipe is easy, quick and delicious... enjoy!

Ma Tante's Coffee Cake

 

Flour                                             5 cups

Brown sugar                                 1½ cups

Sugar                                            1 cup

Salt                                               2 teaspoons     Nutmeg                                         2 teaspoons

Oil                                                 1 ½ cups

Cinnamon                                     2 teaspoons

Baking soda                                  2 teaspoons

Baking powder                             1 ½ teaspoons

Eggs                                              4  

Buttermilk or milk                         1 cup (recommend buttermilk)

Combine first 6 ingredients in mixer at low speed.  Mix until crumbly.  Save 1 cup for topping. 

Add cinnamon.  Combine last 4 ingredients, add to mix and blend.  Don’t over mix.  Pour into greased pan.  Spread cinnamon crumb topping on top.  Bake at 375F for 25-30min.
